Black Angus Prime Rib rubbed with a mixture of rosemary, thyme, garlic, sea salt, and fresh ground pepper then slow oven roasted or smoked with oak and pecan wood.

Sides:

Roasted Garlic Mash-Fresh Russet potatoes roasted with garlic, sea salt, and fresh ground pepper and topped with parmesan cheese.

Green Beans Amandine-Fresh green beans sautéed with butter, sea salt, and fresh ground pepper; topped with almonds.

Bread:

Fresh golden baked rolls topped with butter.

Condiments:

Creamy horseradish sauce, Dijon mustard, fresh grated horseradish, Au jus, balsamic demi glaze.

TENDERLOIN

Entrée:

Angus Prime Tenderloin rubbed with sea salt and fresh cracked pepper that makes a delicious crust around the tenderloin

Sides:

Creamed Spinach-fresh baby spinach, heavy whipping cream, sea salt, white pepper, and a pinch of nutmeg

Roasted Rosemary Red Potatoes-Red potatoes sautéed in extra virgin olive oil and a blend of fresh rosemary, garlic, sea salt and fresh ground pepper.

Bread:

Artesian sourdough bread

Condiments:

Gorgonzola cream sauce, Coach's steak sauce, sautéed Crimini mushrooms, and caramelized onions.

SALMON

Entrée:

Firecracker Salmon baked with a brown sugar and crushed red pepper rub.

Sides:

Wasabi Mashed Potatoes-Fresh red bliss potatoes with cream, butter, and fresh wasabi.

Grilled Asparagus-grilled over a wood fire until tender.

Bread:

Fresh sweet rolls that are baked golden and topped with honey.

Condiments:

Asian cucumber salad, fresh pickled ginger, garlic aioli, and sriracha cream.
